About Khoya Bhatti
The preparation of Khoya Bhatti is an artisanal process that requires time, patience, and skill. First, fresh khoya is placed in large, heavy-bottomed pans and set over a low flametraditionally a wood-fired bhatti. The khoya is continuously stirred and roasted for several hours, allowing it to darken gradually and develop complex flavors through caramelization and Maillard reaction. During this process, sugar or jaggery may be added, enhancing the sweetness and deepening the color even further.
